About the event
The Genovese pasta dish from Naples, usually called Pasta alla Genovese, is one of the great paradoxes of Italian cooking. Despite the name, it's a classic dish of Naples, not a specialty of Genova.
The dish is characterized by:
A huge amount of slowly cooked onions (often several times the weight of the meat).
Beef (traditionally cuts suitable for braising).
A very long, gentle cooking process—often 4 to 8 hours.
No tomato; unlike many southern Italian sauces, Genovese is fundamentally an onion sauce.
