Pasta alla Nerano is a classic dish from the small seaside village of Nerano on the Amalfi Coast in southern Italy. It’s known for turning a few simple ingredients into something unexpectedly rich and creamy.
The dish is typically made with fried zucchini sliced into thin rounds, a semi-aged provolone, extra-virgin olive oil, fresh garlic, and lots of basil!
What makes it distinctive is the texture: even though there’s usually no cream, the melted cheese and starchy pasta water combine into a silky sauce that coats the pasta.
Each portion is $12 and it must be pre-ordered by Monday night with a simple RSVP. You can enjoy it both dining in or as a carry out order. May we suggest a chilled glass of Neapolitan Falanghina wine to pair with this beautiful dish?
